Can I use roasted potatoes for a Potato salad?

Just curious if anyone ever tried this, and how did it come out...also, if you have a easy potato salad recipe, please tell me....I have mayo, relish, eggs, and thyme,onions, celery herbs etc..I have never made potato salad and I would like to give it a go..
